No oak here yet this is still a deep and intense wine with black fruits, orange peel, spice and liquorice and a smooth, silky, almost sweet palate.

From the vineyards one can see the town of San Sebastian and understand the influence of the Atlantic Ocean on this vineyard site. Ignacio Ameztoi is the seventh generation to carry on the tradition of making Txakolina in the province of Getaria. Made from the indigenous grape variety of Hondarribi Zurri and its red companion Hondarribi Beltza, the wine is fermented in stainless steel and bottled with residual carbonic that gives the wine its natural spritz. From Bilbao to San Sebastian, Txakoli is served in the Pinxtos bars poured with great panache from a great height into small tumblers. The green-tinted liquid turns chalky-white, foams and eventually settles, retaining a lively spritz.

In 1966 Paolo Bosoni started looking after the farm which was handed down from his father and from his father's father. The vineyards he established can be found among the hills facing the Magra river plain, overlooking the sea. The rolling hills are peppered with the remnants of ancient Roman farms, mediaeval and renaissance palaces. Pale straw yellow with golden reflections. Intense and persistent with very refined and elegant hints of wild flowers and pleasant undertones of acacia honey. The palate is fresh and harmonious, with reverberations of wild flowers and fresh fruits. Barely perceptible and intriguing almondy finish.

Very traditional and delicate, allegedly this Monk in the 1700's was the creator of the first Champagne wines as we know them today. Dom Perignon did however invent the style of cork and wire cage 'muselet', not quite so romantic. Of course the Brit's came up with the bottle to stop it exploding! He also sported a classic tonsure - mighty monkish.

From a single vineyard of Muscat de Frontignan, the wine is aged for one year in old French oak and bottled and matured before release. The mouth-watering sweetness is cut by tangy acidity to provide a lingering after taste. Naturally fermented and unfortified, this wine is a perfect match to foie gras and other savoury entrees to sweet, spicy puddings served with cream or a traditional cheese platter at the end of the meal.
