CARIGNAN VIELLES VIGNES GRANGE DU MIDI 2014 PAYS D’HERAULT 12.5%  21.00

The present owner Pierre Bories can trace his ancestry back to those who

created this vineyard, situated in Montseret (renowned for honey flavoured

with thyme, rosemary and lavender).  The Atal Sia is grown on the pudding

stone (over sandstone) terroir of Boutenac and is a lush confection of

Carignan 45%; Grenache 25%; Mourvèdre 25% and a dollop of Syrah for poke.

No oak here yet this is still a deep and intense wine with black fruits, orange peel,

spice and liquorice and a smooth, silky, almost sweet palate.

DOMAINE LE ROC DES ANGES 2013 Cotes du Roussillon 13%                          28.00

The Segna de Cor comprises 50% Grenache, 30% Carignan and 20%

Syrah. The relation between the Grenache and the terroir of Roc des

Anges gives fruity and fleshy grapes. To balance this generosity, they

Are blended with old Carignan (60-80 years old) and Syrah giving

firm structure and dark colour and resulting in a tender and fruity wine

sustained by a real texture of tannins. Lively and fresh in the mouth,

gentle flavours of red grape and berry, dried spices and roasted herbs.

From the rock of the angels springs the blood (Segna) of the heart (Cor).

From the vineyards one can see the town of San Sebastian and understand

the influence of the Atlantic Ocean on this vineyard site. Ignacio Ameztoi

is the seventh generation to carry on the tradition of making Txakolina in the

province of Getaria. Made from the indigenous grape variety of Hondarribi

Zurri and its red companion Hondarribi Beltza, the wine is fermented in stainless

steel and bottled with residual carbonic that gives the wine its natural spritz.

From Bilbao to San Sebastian, Txakoli is served in the Pinxtos bars poured with

great panache from a great height into small tumblers. The green-tinted

liquid turns chalky-white, foams and eventually settles, retaining a lively spritz.

The Binner family have been making wine since 1770 and much of

estate is designated as Grand Cru. Grass prevents erosion and

the soil is free from chemicals and pesticides. Harvest is by hand and

yields are kept low. The wines are also vinified as naturally as possible,

with as little as possible added and are bottled without sulphur or

filtration. A blend of Sylvaner, Auxerrois, Gewurztraminer and Pinot Gris.

A later harvest than their neighbours allows for fuller ripe fruit and resulting

complexity of flavour in the wine. (Organic, Biodynamic, Natural, Unfiltered)

DOM PERIGNON 2004 12%                                                                                      140.00

Very traditional and delicate, allegedly this Monk in the 1700’s was the

creator of the first Champagne wines as we know them today.  Tell that

to the Benedictine Monks in the Loire making sparkling wines in the 1500’s,

not forgetting the British Christopher Merret presenting a paper on sparkling

wines in 1664.  Dom Perignon did however invent the style of cork and wire

cage  ‘muselet’, not quite so romantic.   And of course the Brit’s came up

with the bottle to stop it exploding!  He also sported a classic tonsure – mighty monkish.

THE BACK BAR IS FULL OF WEIRD AND WONDERFUL SPIRITS, SOME OF WHICH YOU RISK LIFE AND LIMB TO TRY.  THROAT BURNING RUMS, KILLER ABSINTHE, MELLOW MALTS, AROMATIC GINS, VICIOUS ICE COLD VODKAS, IT MAY BE EASIER TO ASK WHAT IS NOT THERE.  IF WHAT YOU WANT IS NOT HANGING AROUND  YOU CAN BET PADDY HAS SOMETHING JUST LIKE IT ….. BUT BETTER.

Vintages and % volumes may change according to availability

In fact everything is subject to change because who knows just

what is going to happen.  Life can be a bitch like that!

Some wines labelled organic may not have Soil Association Certification as the vineyards may be too small to warrant the expense and jump through the hoops required.
